Our Story

Born in a Pandemic, Built with Heart

What started as necessity became Katipunan's most quietly beloved taqueria. Dexter Oliveros launched Papi Oli during the pandemic as a way to create something sustainable and offer work to friends who had lost their livelihoods. The name itself is personal — "Papi," his wife's term of endearment, fused with "Oli" from the Oliveros surname.

Tucked inside The Pop-Up Katipunan, a container-van food park along Katipunan Avenue, Papi Oli found its rhythm among students, late-night crowds, and repeat regulars drawn back by consistent, bold flavor. While other stalls came and went, this one stayed — because it earned its place one taco at a time.

Co-owner Wincheska Young-Oliveros runs the brand alongside Dexter, each working to their strengths while valuing each other's input. "We first identify the root cause of the problem," she shares. "We listen to our employees and customers and try to come up with the best solution as soon as possible." That clarity is why Papi Oli is still here.
